Pope Insidous' Turkey Rolls

This beloved Pope would often toss these nutrious treats to basphemers prior to their being stoned to death, much to the delight of the masses

Turkey scaloppine
Baby spinich
procuitto
flour
olive oil
low sodium chicken broth

Pound the heck out of the scaloppine. Place a layer of spinich and proscuitto on each. Roll and secure with a toothpick. Dust each with flour and salt and pepper. Brown in the olive oil, turning frequently, then cook covered for 7-10 minutes until middle is no longer pink. Move to a plate and tent with foil. Add broth to skillet, bring to boil and reduce by half (you might want to add a little more flour to thicken. Pour over turky rolls and serve.

If you don't like your guests, don't tell them that there are toothpicks inside.

Tuna suprise


1 can tuna in water
1 jalopena pepper
1 tbls. Low fat mayonnaise
1 mold (lid and bottom removed from tuna can
3 pine shoots
chippolee sauce
1 tsp EVO

Put pepper in food processor with EVO and destroy
Mix tuna with mayonnaise, fresh pepper
Fill mold halfway with tuna mixture, place layer of destroyed peppers and follow with rest of tuna
Remove mold
Serve on a plate with pine shoots sticking out of top with a ring of sauce around it

Vegetarian Chili

3 cans each of white beans, black beans, kidney beans, drained
as much garlic as you can tolerate
low sodium chicken broth
1 green pepper
2 onions
2 zuchinni
olive oil
1 tsp cumin
chili powder
1 can chopped tomatoes with jalopeno peppers


Sautee sliced pepper, onions and zuchinni in oil until tender. Add garlic for 1 minute. Add beans, cumin, tomatoes, chili power to taste. Simmer for about 1 hour until everything is tender and flavors have combined. Adjust seasoning.

Quick Snack

1 slice whole wheat bread
several this slices of roasted turkey
1 slice provolone
horseradish spead

Place cheese on turkey and microwave for ~30 seconds
Spread horseradish on bread followed by heated turkey/cheese
