Holy Hummus

1 can chick peas
5 cloves garlic
extra virgin olive oil
1 jar roasted red peppers
Jalopeno pepper to taste

Put all in a food processor except for the oil. When they're pureed, add the oil until it reaches a smooth consistency.

White Bean and Spinach Soup

A different take on escole and white bean.

3 cans cannoli beans, drained
1 package baby spinach
5 cloves of garlic, finely chopped
low sodium chicken broth
extra virgin olive oil
Parmesian cheese

Heat oil and sautee garlic for about 1 minute. Add beans and enough chicken broth to cover. Cut spinach into pieces and add to soup. Bring to boil and simmer slowly until beans are tender, about 45 min - 1 hour. Bring soup to desired thickness with broth.

Serve with more olive oil for drizzling and some cheese sprinkled on top

EVO

Next time you're about to devour a take-out pizza, drizzle a little good extra virgin olive oil on top and let it set for a minute or two. It's healthy and will add more flavor.

Add Some Pizzazz

Next time you're cooking a dish that requires sauteeing garlic, add a little freshly ground ginger. Especially good with meats and chicken.
